Superfood Amaranth and Berry Breakfast Bowl
Start your day with this nutrient-dense Amaranth and Berry Bowl. Amaranth is an ancient, gluten-free grain that was a staple food of the Aztecs. It has an earthy, nutty flavor and is packed with protein, fiber, and micronutrients.
Ingredients:
- 1/2 cup organic amaranth grain
- 1.5 cups almond milk (or milk of choice)
- 1 tbsp maple syrup or honey
- 1/2 cup fresh berries (blueberries, raspberries)
- 1 tbsp chia seeds
- A handful of sliced almonds
Method:
- Combine amaranth and milk in a small saucepan. Bring to a boil, then reduce heat to low and cover.
- Simmer for 20-25 minutes until the liquid is absorbed and amaranth is creamy.
- Stir in maple syrup and transfer to a bowl.
- Top with fresh berries, chia seeds, and sliced almonds. Serve warm!
